Thankful For One-Day-Only Sales!!


Today King Soopers had a one-day-only sale on all Kellogg products. They had marked them all 50% off. But I didn't know what the starting price was so... I gathered up all of my Kellogg cereal coupons and headed out to the store in hopes of finding a good deal awaiting me!!

And guess what...I snagged 10 boxes of cereal for an average of .63 cents a box!!! Now that is a great sale. I had a coupon for 9 out of 10 boxes (all $1.00 off or more) and with my coupons I got one box of cereal free and one for only .24 cents!!

I also picked up some milk...got to have it with all that cereal!! The coffee was on the same isle as the cereal and we were out. So my total would have been $44.93, but after sale and coupons...the total amount I paid was $15.48!!! Not to bad!! The cashier said I was a savvy shopper and she was impressed with the amount of money I saved!! But, little did she know... that's wasn't all...

Kellogg's is running a promotion right now called Fuel for School. When you buy 10 Kellogg's products you receive a $10.00 rebate check!! Go here if you want to learn more about this promotion.

So actually I got a fantastic deal!! I got cereal for free and an extra $3.73 back in my pocket!! I am one thankful mom on this Thankful Thursday!! See...even King Soopers knew that Thursdays are thankful days!!

Less Criticism and More Praise!!

There was this man I heard about. His wife was making breakfast and he asked for two eggs, one scrambled and one fried. She made them and put them on a plate, when he saw them he just shook his head.

She said, "What did I do wrong now? That's exactly what you asked for."

He said, "I should have known it. You fried the wrong egg!"

Some people have become so critically minded, that it doesn't matter what you do, it's not going to be right! Instead of always seeing the negatives in life, why not focus or magnify the positive!!

I challenge you to make a list of the positive things you see in your spouse, your children, or even yourself. When you start focusing on their good characteristics, you will start to appreciating them even more than you do today. And that my friends, is a positive thing!!

Mozzarella-Stuffed Turkey Meatloaf



Serves 6
Prep Time: 10 Minutes
Cook Time: 1 hour

1 1/2 pounds ground turkey breast
1 10-ounce package frozen chopped spinach, thawed and squeezed to remove excess water
1/2 cup minced onion
1/2 cup seasoned dry bread crumbs
1/4 cup chopped fresh parsley
1 teaspoon dried oregano
2 egg whites
1/2 teaspoon salt
1/4 teaspoon ground black pepper
4 ounces grated part-slim mozzarella cheese (1 cup)
2 tablespoons ketchup
2 tablespoons Dijon mustard

Preheat oven to 375 degrees F. In a large bowl combine turkey, spinach, onion, bread, crumbs, parsley, oregano, egg whites, salt and pepper. Mix well with a wooden spoon (or your clean hands).

Press half of the mixture into and 8-inch loaf pan. Top bottom half with grated mozzarella cheese. Press remaining turkey mixture over top and flatten to make an even layer. Whisk together ketchup and mustard and spread mixture over prepared meatloaf.

Bake 1 hour, until top is golden and loaf has pulled slightly away from sides of pan. Let stand 10 minutes, then slice into 6 equal pieces and serve.

M.A.D. Menu Plan Monday

I am starting another new segment to my blog called M.A.D. Menu Plan Monday! The M.A.D. stands for Mothers Amazing Dinners!! I know...a little bragging there!!

Each Monday I will share with you what I have planned for the week and how much I spent at the grocery store for groceries. I thought by sharing this information, I would stay more organized and accountable for my money.

Hopefully this new segment will also help you get more organized for your own weekly meal planning and you might just score some new ideas to make M.A.D. meals of your own!!

Our menu plan for this week is as follows:

Monday: Chicken Gumbo (has veggies included in dish)

Tuesday: Mozzarella-Stuffed Turkey Spinach Meatloaf with mashed potatoes and roasted veggies

Wednesday: Easy Spinach Lasagna with french bread and roasted veggies

Thursday: Roasted 5-Spice Chicken with Bok Choy

Friday: Spaghetti with Mini-Meatballs with french bread and veggies

Saturday: Crunchy Chicken Cheese Bake with veggies

Sunday: Homemade Pizza !

Just to let you know that my veggies will vary, sometimes I may roast some squash, bell peppers, and zucchini if I am making a meal that already requires use of the oven. Or for the veggies I may use a bag of Birds Eye steamed vegetables, like the broccoli and cauliflower mix. I can usually find those on sale for a great price! Or it may be what ever I have on hand.

This week I spent a total of $57.35 for groceries.

Free Pastry at Starbucks!!

This Tuesday, July 21st, Starbucks is giving away a free pastry with the purchase of a drink. Print out the invitation and take it to a participating Starbucks store between open and 10:30 a.m.

Wordless Wednesdays

I am starting a new segment called Wordless Wednesdays. I have seen this idea posted on other blogs and thought it would be a neat addition to my own blog.
