One of Sebastian's favorite things to do is go for an evening walk. Along our walk, we always pass by this fence and when we do, Sebastian loves to climb behind and peek through. My husband and I always say that would make for such a cute picture, but we never had a camera with us.
Well, this time I remembered to bring a camera along and I think we were right. A very cute picture indeed!

RARE Coupon For $1.00 Off Udi's Gluten Free Bread!!
I have tried this bread and as far as gluten-free breads go, this brand was the closest to tasting like real bread! It can cost over $5.00 a loaf, which by the way, is a lot smaller than regular bread. So finding a coupon on this product is super nice!!

Travelin' Around Town Tuesday
This week I went to 4 stores! My travels took me to Sprouts, Safeway, Target and the Bread/bakery outlet store.
Sprouts total spent was $42.95. (Not pictured because I forgot!) I purchased bread, bulk rice, eggs, organic waffles, organic pasta, 3 lbs organic grass-feed beef, organic grass-feed hot dogs, tomatoes, nectarines, peaches, organic apples, and bananas.
Safeway total spent was $10.41. I purchased 3 Mott juices and 6 Classico Pasta Sauces.
Target total spent was $15.11. I purchased 4 boxes of Kashi TLC bars, 4 packs of Juicy Juice, 2 Dannon Yogurts, 4 bags of Bear Naked Granola, 2 Simply Lemonades, and strawberries. (I will break this trip down showing you coupons and sales in another post.)
Bread/Bakery Outlet Store total spent was $7.97. I purchased 2 Boboli crusts, 2 whole wheat loaves of bread and a bag of hot dog buns.
My total for this week was $76.44. I was over budget by $11.44. I am okay with that though. Because I know the reason why is that spent more at Sprout's trying to stock up on organic beef while it was on sale.

New Mexico Chicken Posole
This makes 2 batches!!
Prep time: 35 minutes
4 bonesless, skinless chicken breasts
8 cups chicken broth
1 teaspoon ground cumin
2 teaspoons garlic, minced
1 4-ounce can diced green chilies
1 14-ounce can green enchilada sauce
1 28-ounce can tomatillos, chopped (I used Rotel)
3 15-ounce cans hominy
coarse salt and freshly ground pepper, to taste
1 white onion, chopped
1.) Cover the chicken with broth in a large pot and bring to a boil. Let cook over medium-low heat for 20 minutes. Remove the chicken from the broth and let cool in a colander. Cut into small pieces.
2) Skim any fat from the broth . Add cumin, garlic, green chilies, enchilada sauce, tomatillos, hominy, and onion to the stock. Season with salt and pepper. Cook for 15 minutes
3) Add the chicken to the soup. Divide soup into serving bowls. Garnish with sour cream and avocado, and serve with a flour tortilla, if you have it.

10 ounces whole button mushroom, halved
1 10-ounce box of plain couscous (I used Parmesan)
4 green onion, sliced
1 cucumber, peeled, halved lengthwise, seeded, and diced
1 1/2 cups cherry tomatoes, quartered
1/2 cup cilantro, chopped
2 tablespoons lemon juice, and zest
6 tablespoons olive oil
salt and pepper, to taste
12-inch bamboo skewers soaked

3) Add the green onions, cucumber, tomatoes, cilantro, lemon zest, lemon juice, olive oil, and a little more salt to the couscous. Toss to combine.
Sour Cream Chicken Enchiladas
Serves 4
Prep Time: 30 minutes
Cook Time: 20 minutes

2 cups shredded Mexican blend cheese
1/4 cup butter
1/4 cup all purpose flour
2 cups chicken broth
1 cup sour cream

olive oil cooking spray
Preheat oven to 400 degrees.
1) In a large skillet, cook chicken and onion together in oil over medium-high heat until chicken is just done.
2) Divide cooked chicken evenly between tortillas; add 2 tablespoons cheese to each tortilla.
3) Roll enchiladas and place seam-side down in baking dish (9 x 12) coated with cooking spray.
4) Melt butter in a medium saucepan; stir in flour to make a roux; stir and cook until bubbly; gradually whisk in chicken broth then bring to boiling, stirring frequently.
5) Remove from heat; stir in sour cream and green chilies; poor sauce evenly over enchiladas. Top with cheese and bake for 20 minutes until cheese is melted and sauce near edges of baking dish is bubbly.

Travelin' Around Town Tuesday
This week I went to just one store, King Soopers.
King Soopers total spent was $47.46. I purchased 5 lbs. of blueberries, 6 bags of Boulder Chips, 4 bags of Sargento Cheese, 2 turkey sausages, 3 pkg of ground turkey, organic milk, bread, turkey lunch meat and some pull ups.
After coupons and sales, I saved a total of $36.66 or 44 %! Not to bad for a day of shopping!

Trans. Fats...Not All That! (Part 2)
Today, I want to share with you all the wonderful foods you can enjoy that do not contain trans fats. To know whether or not a food item contains trans fats is rather simple...basically, it's best, when it's fresh!
All fresh produce does not contain trans fat. Where you really need to be careful, and read those labels, is with anything that has been processed. When reading labels, you will not see in any product's list of ingredients the words "trans fat." That doesn't mean it's not there, it's just not technically called that. Look for words like "partially hydrogenated" or "hydrolyzed" or anything with "hydro" in the description. That's a trans fat.
Now, if you're looking at the ingredient lists on your favorite foods for those types of terms, prepare to be overwhelmed. If you're at the grocery store almost EVERYTHING on the cookie and cracker aisle contains trans fats.
Even the foods that say they don't contain trans fats actually do, because in really tiny print it says "per serving" which means it contains it, just not enough to be considered a full serving's worth. Almost all baked goods contain trans fats unless they are organic. They key here is you got to read those labels. It may take you longer in the grocery store, but your health is so worth it!!
You can avoid trans fats if you take a little more time in reading labels and making wise food choices. You and your family's health are worth the effort!!

Summer Squash and Corn Chowder with Tomato Bruschetta
Prep Time: 20 min.
Cook Time: 20 min.
Serves 4
Summer Squash and Corn Chowder:
2 slices applewood-smoked bacon
3/4 cup sliced green onions, divided
1/4 cup chopped celery
1 pound yellow summer squash, chopped
1 pound frozen white and yellow baby corn kernels, thawed and divided
2 1/4 cups 1% low-fat milk, divided
1 teaspoon chopped fresh thyme
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon salt
1/4 cup (1 ounce) shredded extra-sharp cheddar cheese
1. Cook bacon in a large Dutch oven over medium-high heat until crisp. Remove bacon from pan, reserving 2 teaspoons drippings in pan. Crumble bacon, and set aside. Add 1/2 cup onions, celery, and squash to drippings in pan; saute 8 minutes or until vegetables are tender.
2. Reserve 1 cup corn; set aside. Place the remaining corn and 1 cup milk in a blender; process until smooth. Add remaining 1 1/4 cups milk, thyme, 1/2 teaspoon salt and pepper to blender; process just until combined. Add pureed mixture and reserved 1 cup corn to the pan. Reduce heat to medium; cook 5 minutes or until thoroughly heated, stirring constantly. Stir in 1/8 teaspoon of salt. Ladle about 1 1/2 cups soup into each of 4 bowls; top each serving with about 1 tablespoon of bacon, 1 tablespoon remaining onions, and 1 tablespoon cheese.
Tomato Bruschetta:
1. Preheat the oven to 425 degrees.
2. Arrange 12 thin baguette slices on a baking sheet; bake at 425 for 6 minutes or until toasted. Rub toasts with cut sides of halved garlic clove. Combine 1/2 cup finely chopped tomato, 2 teaspoons of chopped fresh basil, 1 1/2 teaspoons of extra-virgin olive oil, 1 teaspoon of balsamic vinegar, and 1/8 teaspoon salt; top toasts evenly with tomato mixture.
Cook Time: 20 min.

My Trip To The Body Shop...
I snagged a great deal at The Body Shop today!! Remember the $5.00 coupon I told you about HERE? Well I printed off two of them, grabbed my husband and headed to the mall.
