A Reminder...You're Worth It!


My sister, Stacy has a blog called Heartprints of God. And today she wrote a great reminder of how we should live everyday.

This morning for breakfast, I had the most amazing dining experience. I was seated at a quaint little outdoor patio table, surrounded by beautiful flowers and the soft fragrance of jasmine. The air was cool and fresh, and soft music could be heard in the distance. My meal was prepared to taste, and was absolutely delectable from the first bite until the last! Truly, it was an extraordinary way to start an ordinary day. But then again, I'm worth it!
 OK, before this starts sounding like a Loreal commercial, let me explain...(go HERE to read the rest of the story.)

On this Thankful Thursday, I wanted to pass along Stacy's wisdom in hopes of helping you remember to live your life to the fullest. Take time to LIVE!! Taste it, smell it, touch it, experience it all because You. Are. So. Worth. It. =)

Hummingbird Cake

 
Prep Time: 15 min.
Cook Time: 40 min.
Serves: 20

For Cake:
3 cups all purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
2 cups sugar
1 1/2 cups vegetable oil
3 large eggs, beaten
8 oz. crushed pineapple, undrained
1 1/2 teaspoon vanilla extract
2 cups chopped pecans
2 bananas, chopped
homemade cream cheese frosting 


For frosting:
8 ounces cream cheese
8 tablespoons (1 stick) unsalted butter at room temperature
2 cups confectioners' sugar
2 teaspoons vanilla extract


To make cake:
1. Preheat oven to 350 degrees.

2. Combine the flour, baking soda, salt, cinnamon and sugar in a large mixing bowl. 

3. Add the oil and eggs, stirring until moistened. Stir in the pineapple, vanilla, 1 cup nuts and bananas. Do not use a mixer!!!!

4. Pour into a greased and floured 9x13 baking pan. Bake for 35-40 minutes or until a knife inserted comes out clean. Let cool.

5. Frost the cake with cream cheese frosting and sprinkle with remaining nuts. 


To make cream cheese frosting:
1. Place cream cheese in the bowl of an electric mixer fitted with the paddle attachment. Beat on medium speed until smooth. Add butter, and beat until fluffy.

 2. Reduce speed to low; gradually add sugar, and continue beating until light and fluffy. Add vanilla, and mix to combine.

Swagbucks: Raising Money For Japan

As you all know, a record breaking earthquake hit Japan on March 11, resulting in a enormous tsunami. The destruction left behind is unbelievable and the death toll, extremely heart breaking. We all have been left with an overwhelming feeling of sadness. 


But, you can help. If you have joined Swag Bucks, you can easily donate your Swag Bucks to the Japan Earthquake & Tsunami Relief fundAll Swag Bucks collected will go directly toward donations to All Hands Volunteers, a US-based, 501(c)3 non-profit organization, that provides hands-on assistance to survivors of natural disasters around the world, with maximum impact and minimum bureaucracy. Darn You...Disappointment!

Today, I am playing the 'I Wish" game. I am sure you have played it before...it goes like this...

"I wish" I had a million dollars.
"I wish" I was skinny like that lady.
"I wish" I had a bigger house.
"I wish" I could go on vacation....right now!
"I wish" I was exempt from disappointments....

I know most of the wishes I have on that list are purely material things. And I don't really need any of those things to be a happy, complete person. But the last wish...I really do wish I could make come true. Not only for me, but for all of you. Let's face it....disappointments can be heart breaking and sometimes, almost to much to bear.

Yet, as we all know, NO ONE is exempt from feeling disappointed. They are a part of life. We have to teach our children from a fairly early age that disappointments do exist and you will have to learn how to react when they happen to you. 


I guess that's the silver lining in a disappointment...the how are you going to react part? Because we can't control the failure of an expectation....but we CAN control our reaction. 


And that's the part I am going to choose to focus on today...my reaction.


Yes, "I wish" disappointments didn't exist for me or you. Yes, "I wish" that every expectation we set for our lives is always met! Yes, and while we are at... "I wish" you all had a million dollars, too!


But today, I am going to pick myself up, dust myself off, and tell myself, "Laura, disappointments happen. You can choose to let this destroy your entire day or you can set another goal and step out in faith and believe. Your choice. Now, what's it gonna be??"

Did Somebody Say...CAKE?!!

I had planned no dessert for this week but when I saw this recipe, I thought, "Oh, Heck Ya!!"



Mix a little pineapple with some banana and pecans!! Top it with some homemade cream cheese frosting and say a delicious, "YUM!" I made it...and I don't regret it! :) 

I will be sharing the recipe with you next week on my M.A.D. Menu Plan Monday. You don't want to miss it, little hummingbirds!! (wink, wink)

Travelin' Around Town Tuesday....

This week I went to 3 stores; Sprouts, Target, and King Soopers.


Sprouts total spent was $41.54. I purchased whey protein, dates, cheddar and parmesan cheese, tilapia fillets, green grapes, avocados, limes, lemons, squash, celery, apple, cilantro and carrots.


Target total spent was $3.55. I purchased 2 Scrubbing Bubbles refills, 2 Scrubbing Bubbles toilet gels, 2 Classico Pasta Sauce (44 oz.) and a seed starter kit. I used coupons on everything and $15.00 of Target gift cards.


King Soopers total spent was $26.02. I purchased organic eggs, organic milk, corn tortillas, OJ, ice cream, (bad for you! ) cookies and french bread.


Total spent this week was $71.11. I was over budget by $6.11....those darn cookies...it's all their fault!!!!!

Thank You And The Winner Is....

First, I want to thank everyone that completed the survey part of my recent giveaway! Your feedback is sooooo important to me!! I thought you might be interested in some of the results, so let me share!


Almost 80% of you look forward to my organized home and do-it-yourself (DIY) projects. Good news... I like those too! So there will definitely be more of those projects to come!


Around 35% of you said that Sprouts Weekly Sales was your least favorite item on Inspiration For Moms. And one AWESOME reader left a comment saying "Everything you post is always a blessing." How sweet is that?! Many other readers commented that there was not a least...they just had to pick something. All those sweet comments made my heart smile, thank you! :)


And finally, 60% of you want to see more do-it-yourself projects, followed by more recipes and more coupons.
 
So based on your comments, there will be a few changes to Inspiration For Moms. I will be doing more DIY projects and sharing more recipes (and maybe more pictures of the meals, too!) I am also contemplating to no longer post Sprouts Weekly Sales, mostly because many of you don't have a Sprouts Farmers Market close to your home. If you will greatly miss the Sprouts Weekly Sales post, please let me know in the comment section.

Travelin' Around Town Tuesday....Two Stores, Three Trips

This week I went to 2 stores; Target and King Soopers.


Target total spent was $14.76. I purchased Tide detergent, Tide stain release, running shorts, 3 Aveeno lotions, 3 Aveeno bar soaps, and 6 bags of frozen veggies. My total before coupons and sales was $59.23. I used coupons on everything purchased (saving $19.48) and I also used a $5 Target gift card. My total was $29.76, but then I received (3) $5 Target gift cards for my above purchases, bringing my final total to $14.76!



King Soopers (Trip #1) total spent was $6.40. I purchased 4 loaves of Rudy's organic bread. I used $1.00 off coupon. Bread was regularly priced at $4.69  but was on sale for $2.99. And after my coupon, only $1.99 a loaf! Which I think, is a great price for organic bread! 



King Soopers (Trip #2) total spent was $8.15. I purchased a bag of apples, (2) orange juices, organic milk, and organic eggs. I had coupons for everything (saving $6.00) except the apples.


My total spent for the week was $29.31. I will probably be making another trip for this week and if I do, I will update this post.

DIY: My New Lanterns

I loved the style of these lanterns, just not the color. So what's a girl to do? Grab her spray paint, of course!!

This is what the lanterns looked like before I got my hands on them...


First step was to carefully remove the glass panels from each lantern.


Then I took them outside and placed them in a cardboard box. 


I then got my new BFF....


And then it was time to paint....my favorite part!!

Lay your eyes on the finished project with the glass panels reinserted...don't you love it?!

I love the new look and I think it looks better with the warm colors in my home. 

The perfect pair...


I haven't finished the new look of my dining area yet, but it's close. I can't wait to show you these lanterns again when everything is perfectly in place!!

Puffed Peach Pancakes

Sunday mornings are perfect for lazy breakfasts. This recipe is so simple, but so yummy!! And you can substitute with any fruit you may have on hand; pears, apples, or peaches!




Prep Time: 15 minutes
Total Time: 45 minutes
Serves: 4

3 eggs
3/4 cup milk
3/4 cup all-purpose flour
1 teaspoon almond or vanilla extract
1/4 teaspoon salt
1 ripe peach (I usually use 2)
2 tablespoons sugar
3/4 teaspoon ground cinnamon
2 tablespoons butter

1. Preheat the oven to 450 degrees.


2. Place a 12-inch cast-iron skillet or other oven safe skillet in the oven to warm it.


3. In a medium bowl, whisk together the eggs, milk, flour, extract, and salt until smooth. In a separate bowl, toss the peaches with sugar and cinnamon.


4. Carefully remove the preheated skillet from the oven and add the butter, swirling until it is melted. Arrange the peaches in a single layer in the skillet and pour in the batter.


5. Return the skillet to the oven and bake 25 minutes or until puffed and golden. Serve with maple syrup. Enjoy!!
