Travelin' Around Town Tuesday

This week I went to 2 stores; King Soopers and Safeway. 


King Soopers total spent was $37.99. I purchased Ore-Ida sweet potatoes, (9) boxes of frozen spinach, (4) organic lemonades, 2 dozen organic eggs, organic milk, organic apples, organic carrots, grapes, raspberries, an avocado and bananas. I had a coupon for a free bag of Ore-Ida and I had (4) coupons for $.75 off the organic lemonade. With sales and coupons combined, I saved a total of $34.33 or 46% off my total!

 
Safeway total spent was $10.38. I purchased (3) bags of chocolate chips, (2) boxes of cling wrap and a 5 lb. bag of potatoes. I had coupon for the cling wrap and the potatoes, saving me $4.91 or 32% off my total. The chocolate chips were on sale for $2 a bag and I just couldn't pass up that sale!!! This girl loves her chocolate!!


My total spent this week was $48.37.  I may purchase a few more things tomorrow, but I think I will be able to easily stay under my budget of $65! How did you do this week??

ZhuZhu's and Enchiladas Go Together Perfectly!

Last night,  I was in the kitchen preparing some Cheese and Beef Enchiladas. Usually I can cook in the kitchen while my son watches one of his favorite PBS programs...but not yesterday. It was different because I was attacked by ZhuZhu pets!

If you are a mom of a preschooler, you know all about ZhuZhu pets. They are basically little toy hamsters that are motorized. They can go forward and backwards and spin around if they run into any obstacles. They can "talk" to each other, which basically sounds like little squeaks! My son got his first four ZhuZhu pets last Christmas and he played with them the whole day. He has loved them off and on for months. So I thought a great present for his Easter basket would be two more. So yes, when you do the math...that's a total of six ZhuZhu pets running around my house at one time!!! PURE CRAZINESS!!

But for some reason, two days ago, my son became obsessed with them!!!!! He woke up and went straight for the ZhuZhu's and he played with them all day. Then yesterday, same thing. And when it came time to start cooking dinner, he started the great big hamster race right in the middle of my kitchen! 


I started chopping and ZhuZhu's started cruising! On my way to the sink to wash my hands I almost stepped on three different ZhuZhu's. Then I am standing at the stove and feel this guy trying to cross my foot....


Let me tell you...it's a creepy feeling having one of those guys trying to wheel across your foot!



I know that cooking dinner is a crazy time for most moms! But have you ever tried to cook dinner with a four-year-old and six motorized hamsters at your feet?!!


Everywhere I looked and everywhere I went....it was driving me crazy! I wanted to tell him to stop, to leave the kitchen while I cooked and put his 'friends' away until after dinner. I wanted to...but I didn't.


I didn't because I remembered what it was like to have a favorite toy. I remembered what it was like to be a child and be totally consumed by the present moment. I remembered that my son won't always be at my feet, playing in my kitchen. I remembered that times like these should be treasured, not stopped. 


On this Thankful Thursday, I am thankful for my son, playing at my feet. I am thankful for the laughter he is bringing to my evening. I am thankful that my son reminded me to stop and treasure the moments of the day. That's why I can share this with you. Because I stopped cooking. I grabbed the camera. And I captured the moment. Dinner will come together when it happens, but for now....I am going to watch and enjoy the great hamster race right in the middle of my kitchen!

Travelin' Around Town Tuesday

This week I went to 4 stores; Whole Foods, Target, Sprouts and King Soopers.


Whole Foods total spent was $3.99. I purchased two boxes of Back To Nature cookies and some cheddar cheese. I used $4.00 worth of coupons.


Target total spent was $16.92. I purchased (2) BBQ sauces, (4) packs of 8-count Juicy Juice boxes, (2) bags of organic coffee and (1) Bear Naked granola. I used $10.00 worth of coupons.


Sprouts total spent was $43.31. I purchased dried cranberries, whey protein, (2) colby jack cheese, (5) boxes of quinoa pasta, organic chicken breast, broccoli, cabbage, tomatoes, onions and egg roll wrappers.

 
King Soopers total spent was $31.23. I purchased organic milk, OJ, ketchup, mustard, grapes, apples, black pepper, (2) pkgs of Sargento cheese and organic eggs. I saved $8.31 with coupons and sales.


My total for the week was $95.45! I was over budget by $30.45....Ouch! I knew I would be over because I tried to stock up on juice, quinoa pasta and chicken. So next week, I think we will just skip eating! Ha!

Monday, May 23

Cheese and Beef Enchilada Casserole

Prep Time: 30 min.
Cook Time: 25 min.


1 pound ground beef
2 cups shredded cheddar cheese
1 tomato, cored and chopped
2 green onions, chopped
2 teaspoons chili powder
2 teaspoons garlic, minced
12 6-inch corn tortillas
1 1/2 cups prepared enchilada sauce
1 cup shredded Monterey Jack cheese
sliced black olives (optional)

1) Preheat the oven to 375 degrees.

2) In skillet over medium heat, brown the beef and drain.


3) In a mixing bowl, add the cheddar cheese, tomato, green onion, chili powder and garlic.


4) In a 13X9 baking dish coated with cooking spray, arrange 4 tortillas on the bottom. Spread half the cheese mixture and half the beef. Repeat the process with 4 tortillas and the remaining cheese, beef and top with the remaining tortillas.


5) Pour enchilada sauce over the tortillas and sprinkle with the Monterey Jack cheese and top with sliced black olives.


6) Bake for 25 minutes or until the cheese melts. Enjoy!!

Hard Choices

When I fantasized about becoming a parent, I was thinking about all the fun things I would experience. The first walk, the best friend, the school programs, the bike rides, the snuggles and all the love! But to be honest, I never fantasized about the really hard choices I would have to make some days.


I want the best for my son. And I think most moms would agree that everything you do in your life, you do for the betterment of your children. And then we are placed in hard positions with big decisions. And we wonder...am I making the best decision for my child?

My husband and I are struggling at this moment to make a big decision for our son. And I have to tell you....it  has been heart-wrenching. We don't want to screw up. We want to make the right choice. But, what is the right choice?

They never tell you in the "What to Expect" books that you should expect extremely hard decisions as parents that will cause you to loose sleep, cause you to worry yourself sick and ultimately doubt your role as a parent!!!!


I want to make sure that I feel confident about every decision I make for my son. I don't want any regrets. But is that even possible? After all, I am a flawed human. Am I putting to much pressure on myself?


What I do know is that my husband and I have been trying to research and gather as much information as we can. We have asked the opinions of many. And we have prayed, a lot! We are doing all that we can possibly do to make the best decision for him.


So today, on this Thankful Thursday, I can't say I am thankful for this big decision in front of us. Not yet. But maybe in a years time, I will be extremely thankful. Maybe this decision will be the biggest blessing we could have ever hoped for!

Travelin' Around Town Tuesday....

This week I only went to one store; King Soopers. Because I spent so much last week, I was trying to stay in my leftover budget of $26.20.


I purchased (2) pickle relishes, (6) boulder chips, (1) mayo, (1) yogurt, (4) Better Than Oats and (2) loaves of bread. I also got organic milk, organic eggs, OJ, grapes, organic apples, and bananas (not pictured).


My total was $33.25, so I was over by $7.05. Even though I didn't stay within my budget...I think I was pretty close!! Don't you? :)

Travelin' Around Town Tuesday...Are You Sure My Budget Was $65??

This week I went to 3 stores; Target, Sprouts, and King Soopers.


Target total spent was $11.23. I purchased (6) bags of frozen vegetables/rice, (2) bags of coffee, (4) Reach floss, nail files, (2) bottles of nail polish remover and nail clippers. I had coupons for everything I purchased, which saved me $15.67 off my total!!


Sprouts total spent was around $60. I say around $60 because I don't remember the exact amount. The receipt accidentally got thrown away. And I don't have a picture because I was in a hurry and my sweet hubby was nice enough to put the groceries away for me before I could snap a picture. The reason I spent so much was because I was stocking up on grass-feed organic beef (I got 5 lbs!) and I bought a few things that were on sale but still kinda expensive, like organic vanilla and organic peanut butter. I also purchased some deli meat, produce and cheese.


King Soopers total spent was $51.72. I purchased (3) Apple Juices, (2) OJ, (4) pkgs of Sargento cheese, (2) loaves of bread, organic milk, organic eggs, (2) cans of black olives, (2) jars of pickle relish, flour, honey, paprika, yogurt, and some pasta. I stocked up on juice and cheese as these were on sale. I didn't have my coupons with me, so I didn't use any on this purchase. :( But I still managed to save a total of $22.00 off my total!

So my total for this week was $122.95! Yikes! That's two weeks worth of groceries! But last week I was under budget by $19.15. So that brings my total for this week to...$103.80 and I was over budget by $38.80. So my goal for next week is to only spend $26.20....think I can do it???

Monday, May 9

Mini-Cheddar Meatloaves

Serves: 4
Prep Time: 15 min.
Cook Time: 20 min.

1 pound lean ground beef (I have also used ground turkey)
2 large eggs, beaten
3/4 cup panko bread crumbs
2 tablespoons Italian parsley, chopped
coarse salt and ground pepper
1 cup shredded cheddar cheese
3 tablespoons ketchup
1/2 teaspoon garlic salt
4 green onions, chopped

Preheat oven to 450 degrees.

1. Spray a rimmed baking sheet with cooking spray.

2. In a medium bowl, combine beef, eggs, panko, parsley, salt and pepper, and half the cheddar.

3. Form into small loaves (one per serving) and place on baking sheet. Top with ketchup and sprinkle with garlic salt, remaining cheddar and green onions.

4. Bake loaves until they are cooked through, 15-20 minutes. Enjoy!

Happy Mother's Day!

My mother and father in their younger years.

As you may know, today is Mother's Day. And I would like to wish all mother's a very Happy Mother's Day! But I would also like to honor women that are not necessarily biological mothers.

All women have an amazing influence when they devote their lives to the betterment of others. Whether it be through your compassion, your service, your guidance, your nurturing. You make a unforgettable stamp on the hearts of many. 

I know many incredible women, some that will be reading this, that may not have children of their own but have enriched and blessed more children's lives than any mother could ever dream to do.

Every kind, unselfish act, no matter how small, it all matters. Please know that you are a beautiful blessing to all those around you.

My New DIY Dining Table!

I have been dreaming of a new table for years.  I loved the Benchwright Dining table from Pottery Barn...

But at the cost of $1699.00....it just wasn't going to happen!! So I thought, maybe I can build my own table! I gave Ana White's website a visit and found plans for a farmhouse table. It's not exactly like the Benchwright table, but it is close to the same style and it would cost much less!!


I bought the wood and then decided my first step should be to stain all of the wood first. I did this because I thought it would be near to impossible to stain in between the wood pieces once assembled. So I notched out the wood on the legs and started staining.

 
After that step, I started building. This picture shows the table built without the final step...the top!


Once I finished the table, I decided the stain was a little too red for my liking, so I stained the whole table again with a dark brown mohagany. I put about two coats of stain on then I started applying the polyurathane coats. I ended up with three coats to be exact.

I then thought, "Hey, I should make a bench to match!" I didn't have any plans to follow for the bench so I decided to just model it after the table and go for it! Once finished, I stained to match and... Viola`! How cute is that?!!!


I then needed to find the perfect chairs. I searched and searched and I finally found a set at Overstock that was a good price and had great reviews! Plus, how can I girl resist FREE shipping on furniture?!!

So today...I share with you my finished Farmhouse dining room table with matching bench and new chairs!!


A close-up of the notch on the legs for the stretcher. That was something new I had to learn how to do. I think I did pretty good and I love the finished look.  


I thought I would share a picture with nothing on the table so you could see more of the detail...

I designed the bench to match the same style of the table...and I love it. It's fun to sit at and it can (if needed) seat three people! I want to sew a cushion for the bench some day...so that may show up in the future!


My new parson chairs are a dark chocolate leather with black legs. They are very light weight and very comfortable. My favorite part though is that they are super easy to clean. Just wipe and go! When you have kids, that is totally what you need!

And just for fun, I thought I would show you a picture of my dining room table before....


That little table just wasn't cuttin' it! I got rid of all of that! Well, not the hubby or the kid! Oh, and the pug, he stays too!  :)

But now....beautiful and with plenty of room to entertain family and friends!


This table cost around $150 bucks. The legs were the most expensive part at $12.00 each. But I think the detailing on them adds a nice touch to the look of the table!

A little hard work and some sweat ( but, no tears) ....it was all worth it! I am really enjoying it!
